I absolutely love soup season. I could eat soup literally 365 days of the year. The one thing I do not like about making soup is all of the tools and items that are needed. One hack for this is making blender soups. YES, blender. No stovetop needed.
When using a high powered blender such as a Vitamix or Blendtec, you can make soups and sauces and actually heat them enough to cook since the engine is so powerful.
For this soup, all you have to cook is the squash in the oven and then blend everything all together for 5 minutes in the blender. The blender heats up all the ingredients and makes a creamy smooth soup that is piping hot, no stove needed.

Definitely make this soup this Fall before squash season is over!
Ingredients:
- 1 large butternut squash, halved and seeds removed
- olive oil
- salt and pepper
- 1/4 honeycrisp apple, chopped
- 1/2 celery rib, chopped
- 1 carrot, chopped
- 1 cup coconut milk
- 1.5 cup chicken stock
- salt to taste
Preparation:
STEP 1.
Prehaet the oven to 400*F. Coat the squash in olive oil, salt and pepper, and lay on a sheet tray, the flat side down. Roast for 30-40 minutes until soft and cooked through.
STEP 2.
Add all of the ingredients to a blender, scooping out the flesh of the squash and trashing the skin. Blend on high for 5 minutes until you see steam. Turn off and taste for seasoning, adjust accordingly.
STEP 3.
Serve and enjoy.
