Use this glaze for chicken, turkey, duck and pork!
Ingredients:
- 1 whole chicken deconstructed,
- Salt
Maple Butter:
- 1 sprig rosemary
- 2 sprigs of thyme
- ½ cup (1 stick) unsalted butter
- ¼ cup pure maple syrup
- ¼ tsp on how much salt
- Juice from ½ lemon
- 1 Tbsp. Worcestershire sauce
Preparation:
STEP 1.
Salt your chicken on all sides, place on a wire rack over a sheet tray and refrigerate overnight.
STEP 2.
In a pot, add the maple butter ingredients and bring up to a medium heat. Simmer on low for 5-10 minutes to develop flavor. Remove the rosemary and thyme.
STEP 3.
Preheat your oven to 350*F.
STEP 4.
Brush your chicken with the glaze and roast for 20 minutes. Every 20 minutes remove from the oven and brush again with the glaze. Remove the breast after 40 minutes total, and the remainder of the chicken after 60 minutes.
