One of my favorite sauces to go with chicken, pork, or duck, is a port wine cherry sauce. It pairs greatly because it can cut through the richness of a fattier cut of meat with the natural sweetness of the port wine and cherries.

Port wine is a sweet red fortified wine from Portugal. It is naturally sweet, and goes great in sauces. In this sauce it is paired with the cherries, chicken stock, shallots, garlic, rosemary and butter. It is the perfect combination of sweet and savory.

This sauce pairs well with duck, chicken and pork!

Ingredients:

  • 1 tbsp butter, plus 2 tbsp separated
  • 1 shallot, chopped
  • 2 garlic cloves, minced
  • 1 cup port wine
  • ¾ cup halved, pitted red cherries
  • 1 cup Chicken stock
  • 1 sprig of rosemary
  • salt to taste

Preparation:

STEP 1.

In a small pot over medium heat, add 1 tbsp of butter and the shallots. Saute until translucent, salt as you go. Add the minced garlic and saute another 2 minutes. Deglaze with the port wine, bring up to a low simmer, and reduce by half.

STEP 2.

Add the chicken stock, rosemary and season with salt. Bring up to a simmer and reduce until nappe (coat a back of the spoon without moving). Taste for seasoning and adjust accordingly.

STEP 3.

Once thickened, turn off the heat and stir in 2 tbsp of butter. Serve the sauce immediately .
