My favorite way to make mussels is in a white wine and garlic sauce. This recipe is simple, quick and fool proof! If you have never made mussels before, this is a great recipe to try out mussels!
A few things you should know about cooking mussels:
- Mussels are alive until you cook them! If they are dead, they can give you food poisoning. Store them properly so you do not kill them. Place them in a container without a lid and place a damp paper towel on top and store in the fridge.
- When cleaning your mussels, make sure you tap on the shell of any open mussel, if it doesn’t close, it is dead and needs to be thrown out.
- You know mussels are done cooking when their shells completely open up. If there are any mussels that do not open up after a few minutes of cooking, trash it, it was dead and is unsafe to eat!

Ingredients:
- 1 lb mussels
- salt
- 6 tbsp butter
- 2 shallots, chopped
- 4 garlic cloves, minced
- 1 tsp crushed red peppers
- 1 cup dry white wine
- chopped parsley for garnish
Preparation:
STEP 1.
Prep the mussels and set aside. Check out how I clean and prep my mussels here.
STEP 2.
In a stainless steel pan or pot over medium heat, add 1 tbsp of butter. Add the chopped shallots, salt and saute until translucent. Add minced garlic, crushed red peppers. and saute another 2 minutes.
STEP 3.
Deglaze with white wine and reduce by half, salt as you go.
STEP 4.
Turn the heat to low and add 3-4 tbsp of butter, stir in, as you stir it in it should emulsify and thicken.
STEP 5.
Once the sauce is thickened, add the mussels and bring up to a medium heat. Top the pan with a lid and cook for 2-3 minutes. Once the mussels open up, they are ready to eat.
STEP 6.
Top with parsley and serve immediately.
