What is the difference between bone broth and stock?
Stock is simmered for a much shorter time just to extract flavor and some of the collagen. Chicken stock is simmered for 4-6 hours. Chicken bone broth is simmered for 12-24 to extract all the gelatin and collagen from the bones, so it is a little more nutrient dense than stock.

Ingredients:
- 5 lbs chicken carcasses
- 1 lb chicken feet
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery rib, chopped
- 2 bay laeves
- 5 sprigs of thyme
- 10 parsley stems
Preparation:
STEP 1.
Preheat the oven to 400*F. Lay the bones and feet on a sheet tray and roast for 1 hour, or until golden brown.
STEP 2.
Transfer the bones to a large pot, and the remainder of the ingredients. Cover with water, just enough so the bones are covered by one inch of water. Bring up to a low simmer stovetop and top with a lid. Simmer on low for 12-24 hours.
STEP 3.
Strain the broth through a fine mesh strainer and refrigerate or freeze.
