As a chef with celiac disease and with clients who follow specific diets, I have become amazing at recreating classic comfort meals that are allergen friendly and healthier! One of my favorites and my client’s favorites, is my gluten free, soy free, chicken teriyaki!

This delicious dish is a popular Japanese dish that’s made with grilled or pan-seared chicken coated in a sweet and savory sauce. Not only is it easy to make, but it’s also incredibly delicious and packed with flavor. In this blog post, we’ll be exploring what chicken teriyaki is, how to make it, and why it’s such a beloved dish.

What is Chicken Teriyaki?

Chicken teriyaki is a Japanese dish that’s made with chicken that’s cooked in a teriyaki sauce made with soy sauce, sake, mirin, sugar, and ginger – although my sauce is much lighter and made with coconut aminos to make gluten free and soy free! The dish is often served with steamed rice and vegetables.

Key Steps to Chicken Teriyaki:

  • Use boneless skinless chicken thighs – thighs are better for this dish than breasts because they are higher in fat and will not dry out when cooked for longer periods of time while simmering in sauce.
  • Coat the chicken in pure starch like arrowroot / cornstarch – this will help the browning process and get it crispy.
  • Cook the chicken until golden brown before adding the sauce – this will insure that the chicken is crispy and not soggy.
  • Cook the chicken in the sauce until the sauce is thickened and coating the chicken.

What to serve it with:

  • Jasmine, calrose, brown, or basmati rice
  • Cauliflower rice if you want to be lower carb
  • Vegetables like broccoli, cauliflower, carrots, snap peas
  • Garnish with green onions and sesame seeds

Ingredients:

  • 1 – 2 cups teriyaki sauce
  • 1.5 lbs boneless skinless chicken thighs
  • salt and pepper
  • avocado oil
  • 3 tbsp arrowroot powder (or cornstarch)
  • green onions for garnish

Preparation:

STEP 1.

Make teriyaki sauce and set aside.

STEP 2.

Cube the chicken thighs and add to a bowl. Season with salt and pepper all over. Add arrowroot powder and coat evenly.

STEP 3.

Heat a large pan over medium high heat and add avocado oil all over. Once hot, add the chicken in an even layer and let it cook on that side for 4 minutes. Work in batches if needed to not crowd the pan. After three minutes, flip the chicken pieces over and cook another 4 minutes until golden brown.

STEP 4.

Add the teriyaki sauce and bring up to a simmer. Simmer for 3-6 minutes, until the sauce is thickened and coats the chicken. Garnish with green onions and serve!
