Turkish eggs, also known as çilbir, is a traditional Turkish breakfast dish that has been enjoyed in Turkey for centuries. The exact origin of the dish is unclear, but it’s believed to have originated in the Ottoman Empire, which ruled over Turkey and parts of southeastern Europe, western Asia, and northern Africa from the 14th to the early 20th century.

The dish typically features poached eggs served on a bed of garlicky yogurt, drizzled with melted butter that is infused with spices and sprinkled with herbs. It is super simple to make, and very nutritious with healthy fats and protein.

Turkish cuisine is known for its use of fresh, seasonal ingredients and bold flavors, and Turkish eggs are no exception. The combination of tangy yogurt, rich butter, and spicy pepper creates a delicious contrast of flavors and textures that’s sure to delight your taste buds.

Serve this with delicious crusty bread!

Ingredients:

  • yogurt:
    • 1 cup plain greek or coconut yogurt
    • 1 clove of garlic, grated
    • salt and pepper to taste
    • 1/2 lemon, juiced
    • 2 tbsp parsley, minced
  • Aleppo Butter:
    • 1/4 cup butter
    • 1 tbsp aleppo chili
    • 1/2 tsp cumin
    • 1/2 tsp smoked paprika
  • 2 eggs to poach
  • minced herbs of choice for garnish, such as cilantro, parsley, or chives
  • optional: toasted bread for dipping

Preparation:

STEP 1.

Mix the yogurt. Combine the yogurt, garlic, salt and pepper, 1/2 lemon juiced, and parsley with a whisk and set aside.

STEP 2.

Make the aleppo butter. In a small pot over medium heat add your butter. Once melted, add the aleppo chili, cumin and paprika and toast for 3-4 minutes. Turn off the heat and set aside.

Plate the dish. On the bottom, place your yogurt, then poached eggs, top with the aleppo butter and fresh herbs. Serve immediately and enjoy!
