The sauce is typically made with sugar, cream, butter, and salt, although there are variations that use different types of sugars and salts.
The History of Salted Caramel
Salted caramel has been around for centuries, although it has only recently become a popular flavor. The first recorded instance of salted caramel was in the 17th century, when French chefs would sprinkle salt on top of their sweet caramel desserts. Ingredients:
- 3/4 granulated castor sugar
- 1/3 cup butter, cubed
- 3/4 cup heavy cream
- salt to taste
Preparation:
STEP 1.
In a pan or pot over medium heat, add the sugar. Once it starts to melt, stir it with a rubber spatula. It will start to get clumpy and look like the texture of wet sand, this is fine, keep stirring as the sugar melts.
STEP 2.
Once the sugar has melted, is smooth, and dark in color, stir in the cubed butter. It will foam and bubble a lot, but keep stirring until the butter is completely melted.
STEP 3.
Turn the heat off and stir in the heavy cream until the caramel is smooth. Add salt to taste, then jar and use or store in the refrigerator.
