I used to be so intimidated by cooking artichokes, but once I learned how easy they are to cook, I started cooking them all the time!
Choosing the Right Artichoke:
Look for firm, compact artichokes with vibrant green leaves and a tight bud. The leaves should squeak when gently pressed, indicating freshness. Larger artichokes often have a more developed flavor, while smaller ones tend to be more tender.
Preparing Artichokes:
- Cut off the top 1/4 of the leaves.
- Cut off 3/4 of the stem.
- Remove any loose leaves towards the stem.
- Cut off the pointy ends of the leaves with kitchen sheers, they are inedible and can cut you.
- Wash the artichoke.
Steps to Cooking Artichokes:
- Steam or boil. To cook the actual flesh of the artichoke it is essnetial to steam or boil first before cooking any other way. This usually takes 25 minutes.
- Slice in half and remove the choke.
- Finish with grilling, broiling air frying, or roasting!
Dips to Serve with Artichokes:
- Lemon butter
- Garlic Aioli
- Vinaigrettes
- Sundried Tomato Pesto

- TOTAL TIME: 45 Min
Ingredients:
- 1 artichoke whole
- olive oil
- salt
Preparation:
STEP 1.
Prep the artichoke. Cut off the first 1/4 top off the artichoke where the leaves are. Cut off 3/4 of the stem. Remove any loose thin leaves from the artichoke. Finally, using kitchen sheers cut off the tip of the artichoke leaves because they aren’t edible and can cut you.
STEP 2.
Steam the artichoke for 25-30 minutes until fork tender. Remove from the steamer.
STEP 3.
Slice the artichoke in half and remove the “choke” – the hairy looking center part. The choke can get stuck in your throat and is dangerous to consume.
STEP 4.
Coat in olive oil, salt, and any other seasoning of choice. Add to an air fryer or 400*F oven and cook for 10-15 minutes until crispy. Remove and enjoy!
