My favorite food in the world are sweet potatoes. I could (and usually do) eat sweet potatoes every single day. From baked to fries, sauteed, I love it all! One of my favorite forms of sweet potato is pureed.

Since sweet potatoes are high in moisture, they are perfect for purees. They are super creamy, soft, silky smooth and moist. It is the perfect side dish for saucey foods!

Ingredients:

  • 1.5 lb orange sweet potatoes / yams
  • 1/2 cup coconut milk, melted
  • salt to taste

Preparation:

STEP 1.

Preheat the oven to 425*F.

STEP 2.

Line a baking sheet with foil and parchment paper on top. Add the sweet potatoes and poke the sweet potatoes all over with a fork (this is so they don’t explode in the oven because of the steam). Bake in the oven for 45 to 60 minutes, until the sweet potatoes are cooked through and fork tender. Remove from the oven.

STEP 3.

Slice the potatoes open with a knife and remove the skin. Remove the flesh from the skin and place in a food processor or high powered blender.

STEP 4.

Blend the potatoes. As you are blending add the coconut milk and salt. Blend until smooth, add more coconut milk if needed. Serve immediately.
