If I had to pick one salad that is my favorite, I would go with this Italian chopped salad. I have been making this salad for years and it never gets old. With all of the different flavors, from salty, to briney, to sweet, to umami, this salad is always interesting! With multiple ingredient’s origins coming from Italy, they come together in perfect unison for a flavorful salad.

Ingredients:
- 5 cups romaine lettuce, chopped
- 1/2 cup basil, chopped
- 1/2 cup olives, pitted and chopped
- 1/2 cup roasted red bell peppers, sliced
- 1/2 cup artichoke hearts
- 1/2 cup pepperoncini
- 1 cup salami, chopped
- dressing:
- 1/2 cup natural rice vinegar
- 1 tbsp lemon juice
- 3 cloves garlic, minced
- 3 tsp Italian seasoning
- 3 tsp dijon mustard
- 2 tsp honey
- salt to taste
- 1.5 cups extra virgin olive oil
Preparation:
STEP 1.
Combine all of the ingredients, besides the dressing ingredients, in a bowl.
STEP 2.
Make your dressing. In a bowl whisk or immersion blend all of the dressing ingredients except the olive oil. While blending, slowly pour in the olive oil to emulsify and make a creamy dressing. Pour over the salad, mix the salad, and enjoy.
