One of the top questions I get is, “how do I cook chicken breast that isn’t dry and boring?” When done correctly, chicken breast can be delicious! But as we all know, the majority of the time chicken breast come out so dry, or with a weird squidgy texture. Here are my 4 tips to insuring you will get good chicken breast every time!
4 Steps to Delicious Chicken Breast:
- Slice the chicken breast in half and pound thinly. Chicken breast is uneven shape, one side much thicker than the other. So the key is making sure it is even and thin, so all parts of the chicken breast cook at the same rate.
- Pan sear the chicken breast. This gives the chicken more moisture, better sear and flavor, and less likely to overcook it.
- On the second side of pan searing, lower the heat and add butter. This helps with flavor, moisture, and you won’t overcook it on a lower heat.
- Take the internal temperature and pull chicken breast at 155*F. MEAT CONTINUES TO COOK OFF THE HEAT. This means that you want to pull it before it gets to 165*F because it will keep cooking and overcook otherwise! So pull it at 155*F.

Use any seasoning mix to make variations of flavors for this chicken breast!
Ingredients:
- 2 chicken breasts
- Salt
- pepper
- paprika
- garlic powder
- thyme
- avocado oil
- 1 tbsp butter
Preparation:
STEP 1.
Slice the chicken in half and thinly pound so it is one even piece, around 1/4 inch thick. Season with salt, pepper, paprika, garlic powder and thyme all over, or seasonings of your choice.
STEP 2.
In a stainless steel pan over medium heat, once hot add avocado oil all over. Once the avocado oil is hot, add the chicken, two pieces at a time, presentation side down. Cook for 3-5 minutes until golden brown and flip over.
STEP 3.
Lower the heat to low and add butter to the pan. Cook the remainder of the way, 3-5 minutes, until internal temp reaches 155*F. Remove from the heat and rest 5 minutes.
STEP 4.
Slice and serve!
I’ve never heard the word “squidgy.” 😂
