I am a huge fan of bacon wrapped dates and all versions of them, including this elevated version using prosciutto. I have been making these for all fancier potlucks, like Thanksgiving and Christmas! The prosciutto gets nice and crispy, which doesn’t always happen with bacon, while the inside goat cheese is melted and creamy.
They are great for making hours ahead of time, or a quick appetizer made right before serving!

The perfect appetizer for potlucks!
Ingredients:
- 7 slices of prosciutto, thinly sliced
- 14 medjool dates, pitted
- 1/2 cup goat cheese, diced
Preparation:
STEP 1.
Preheat the oven to 400*F.
STEP 2.
Stuff the dates with goat cheese, then wrap in half a slice of prosciutto, tucking the ends underneath the dates. Place them on a parchment lined sheet tray.
STEP 3.
Roast in the oven for 10 minutes, or until they are crispy. Remove them from the oven and cool for 10 minutes before serving. You can also make these in advance and refrigerate! Enjoy!
