Nothing is better than a balsamic vinaigrette on a salad! BOLD statement, I know, but I love the tangy & sweet balsamic vinegar, mixed with garlic, dijon, herbs and oil. It always feels super fresh and healthy on a leafy salad, but not TOO healthy since it is so thick and creamy. If you are a fan of a fresh and easy balsamic vinaigrette, you need to try this recipe.
Ingredients and Substitutions:
- Balsamic Vinegar – now it wouldn’t be a balsamic vinaigrette without a balsamic vinegar! I love using balsmic from Modena Italy. This is where the best balsamic vinegars come from! Many are sold in everyday grocery stores too. Another brand I love is O California for vinegars. Their vinegars are from California and are top notch in flavor. If you can’t get those, any balsamic vinegar will work!
- Dijon Mustard – the mustard here is used for flavor and also to help emulsify the dressing and make it creamy. You may omit the mustard if you don’t like mustard. Adding an egg yolk in place would work great for the emulsion.
- Honey – I use honey as the sweetener here. You can use any sugar of your choice!
- Garlic – just one garlic clove is enough for this whole dressing. It isn’t too overpowering, and adds a depth of flavor. If you dislike garlic, you can omit the garlic clove.
- Italian seasoning – this is used to flavor the dressing. You can use any dried herb that you like here in place of Italian seasoning. I love rosemary, sage, and thyme in this recipe.
- Avocado oil – I like using a neutral oil for salad dressings because it won’t taste bitter or have a flavor. Many oils have too strong of a flavor for vinaigrettes. If you use an olive oil, make sure you use a high quality EVOO, or it WILL BE BITTER!

This is the perfect creamy & tangy salad dressing!
Ingredients:
- 1/2 cup balsamic vinegar
- 1 tbsp dijon mustard
- 1 tbsp honey
- 1 garlic clove, grated
- 1 tsp salt
- 1 tsp Italian seasoning
- 1.5 cups avocado oil or neutral oil
Preparation:
STEP 1.
In a blender or container for your immersion blender, add the balsamic vinegar, mustard, honey, garlic, salt and Italians seasoning. Blend until mixed.
STEP 2.
While blending, slowly add the oil a little bit at a time to emulsify. Add until you reach desired thickness. Serve or store in the fridge for up to 3 weeks.
