There is nothing better than a smoked chicken! The flavors are insanely good, while keeping the chicken super moist. I love throwing a chicken in my smoker or bbq for a couple of hours and making fantastic meal prep from it.

Tips for Smoking Chicken:

  • Spatchcock the chicken. By butterflying the chicken, the breast and thighs will cook at the same rate. Also, more skin will get golden and delicious.
  • Keep the smoker around 250*F. This allows for the meat to slowly cook, while also getting the skin golden and delicious. You can even go up to 300*F for better skin.
  • Add wood chips every 30 minutes. This allows for there to be constant smoke in the smoker, and more flavor.
  • Remove the chicken once the breast reads 155*F and thighs are are 165*F or above.
  • Rest the chicken for 10 minutes before slicing and serving. This allows for the juices to settle.

Ingredients:

  • 1 whole chicken, around 2-4 lbs
  • salt
  • 3-4 tbsp BBQ Seasoning of choice

Preparation:

STEP 1.

Spatchcock the chicken. Do this by cutting out the spine and pressing on the breasts so they flatten out.

STEP 2.

Season the chicken with salt and bbq rub on all sides. Place in the fridge, uncovered, overnight. This will flavor the chicken, and also dry out the skin for better texture.

STEP 3.

Turn your smoker or charcoal grill to 250*F and fill with hickory or apple wood chips. Once the smoker reaches the correct temperature, add the chicken. Add more chips as needed, every 30-45 minutes.

STEP 4.

Cook until the breast reads 155*F internal temperature, and thighs read 165*F or above. This took my bird around 2.5 hours.

STEP 5.

Remove from the smoker and rest for 10 minutes before carving. Serve and enjoy!
