One of my favorite meat dishes is shredded chicken! Whether I am putting it in tacos, or just eating straight up, I could eat it multiple times a week. One of my favorite kinds of shredded chicken is chicken tinga. Chicken tinga is a traditional Mexican dish that features shredded chicken in a flavorful tomato-based sauce. The sauce typically includes tomatoes, onions, garlic, and chipotle peppers in adobo sauce, which give it a smoky and mildly spicy flavor. This is my version of chicken tinga that has a very mild kick, but is packed with flavor!

Ingredients and Substitutions:

  • Chicken Thighs – Thighs are the best for shredded meat. If you want, you can also use chicken breast, but it doesn’t shred as easily.
  • White Onion and Jalapeno – These are the main flavoring aromatics in this dish. You can use any onion if you like, and any pepper.
  • Canned Tomatoes – I like canned san marzano tomatoes for the best flavor. You can use any canned tomato however such as diced, sauce, pureed.
  • Chipotle Peppers in Adobo – These are what add the smokey flavor to the sauce. I highly recommend trying to find these, or using chipotle powder if you cannot.

Serve this with freshly made corn tortillas!

Ingredients:

  • 1 lb boneless skinless chicken thighs
  • salt
  • 1, 28 oz can whole tomatoes
  • 3 chipotle peppers
  • 2 tbsp avocado oil
  • 1 white onion, diced
  • 2 jalapeños, minced
  • 6 garlic cloves, minced
  • 2 tsp cumin
  • 1/2 tsp coriander
  • 2 tsp oregano
  • 1 bu cilantro

Preparation:

STEP 1.

Season the chicken with salt and set aside.

STEP 2.

In a blender, blend the tomatoes and chipotle peppers until smooth. Taste and if you like it spicier, add more chipotle peppers.

STEP 3.

In a medium size part over medium heat, add avocado oil and once warm, add the white onions. Saute until translucent, salting as you go, around 5-8 minutes. Add the jalapenos and garlic and saute another 2 minutes until fragrant.

STEP 4.

Stir in the blended tomatoes, chipotles, spices, chicken, and season with salt. Bring up to a low simmer and top with a lid, simmer for 45 minutes, stirring every 5 minutes or so.

STEP 5.

Once the chicken is tender, turn off the heat and remove the chicken. Shred with two forks and add the chicken back to the pot and coat with the sauce.

STEP 6.

Garnish with cilantro and serve!
