One of my all time favorite foods is fried sweet plantains. I have always been a banana girl, and this is like bananas sister that is appropriate to eat at dinner. Any time they are on a menu, you better bet I am ordering them! Since my addiction is full on, I also make them at home and you would be shocked by how easy they are to make. You will only need a few ingredients and a few minutes to have restaurant quality sweet plantains.
Choosing the Correct Plantain:
There are usually two kinds of plantains that you will find at a grocery store, green plantains and ripe plantains. Green plantains will NOT work for this dish, so stay away from those. They typically take a week to a few weeks to ripen to where you would need them to be. Instead, look for plantains that are yellow and have a lot of brown spots. These are ripe and sweet enough to be used for sweet plantains.
Key Ingredients and Substitutions:
- Sweet Plantains – These are plantains that are very ripe! No substitutions here.
- Avocado Oil – I like using avocado oil for frying because it is a high smoke point oil that doesn’t have a flavor. You can also use another high smoke point oil here, such as grapeseed oil.
- Brown Sugar – This is totally optional, but I like adding a little bit of brown sugar at the end to draw out the sweetness of the plantains.

Ingredients:
- 4 ripe plantains, yellow with brown spots
- 3-4 cups avocado oil
- salt
- 1 tbsp brown sugar
Preparation:
STEP 1.
Cut the ends off of the plantains and then using a knife, cut a line down the plantain through the skin and peel the skin off. Cut the plantain into 1 inch slices and set aside.
STEP 2.
Add 3-4 inches of oil into a small pot and place over medium heat. Bring the oil up to 350°F.
STEP 3.
Once the oil is hot, work in batches, adding 4-6 plantain slices at a time into the oil and frying. Fry until they are golden brown, around 2-4 minutes. Remove them once they are golden and place into a bowl. Do this with all of the plantains.
STEP 4.
Once the last of the plantains are out of the frying pot, sprinkle them with salt and stir in the brown sugar. Serve and enjoy!
