When it comes to celebrating holidays with a gluten allergy, it isn’t especially easy. Many gluten-free replacements just don’t measure up. Take pie, for example—it is so difficult to make a gluten-free crust that holds together and doesn’t crumble apart, as gluten is what usually gives dough its structure. Or consider gluten-free rolls—they are almost always as hard as a hockey puck or incredibly dry.
However, one side dish that actually works well while being gluten-free is stuffing.
Stuffing typically requires dry or stale bread, and gluten-free bread often tastes dry to begin with! Because of this, it works wonderfully in stuffing. Here’s a simple gluten-free stuffing recipe that satisfies the craving for a Thanksgiving classic!

Ingredients:
- 1 loaf gluten free white bread or sourdough
- 3 tbsp butter
- 2 links Italian pork sausage, casing removed
- 1 onion, diced
- 4 celery ribs, diced
- 6 garlic cloves, minced
- salt and pepper to taste
- 2 sprigs rosemary, minced
- 4 sprigs thyme, minced
- 10 sage leaves, minced
- 2 cups chicken broth
Preparation:
STEP 1.
Preheat the oven to 375°F.
STEP 2.
Spread the breadcrumbs onto a large sheet pan and bake until dry, 20-25 minutes. Set aside and cool.
STEP 3.
In a large pan over medium heat add the butter. Once melted, add the sausage and saute until cooked through, breaking up the sausage into small pieces.
STEP 4.
Into the same pan add the onions and celery and saute until translucent, salting as you go. This takes around 5-8 minutes. Once cooked through, add the minced garlic and minced herbs and saute another 2 minutes.
STEP 5.
Stir in the chicken stock and bring up to a simmer. Season with salt and pepper to taste, make sure it isn’t too salty or under salted, this will determine how well the bread tastes. Turn off the heat.
STEP 6.
Stir in the bread so it is evenly coated and moist. Pour everything into an 8×9 oven safe baking dish and transfer to the oven. Bake for 25-30 minutes, until the top is golden brown.
