One of the vegetables that is almost always better in a restaurant is a crispy brussels sprout. At home we obviously don’t have time or necessarily the desire to be deep frying brussels sprouts whenever we want them. So a way I get them just a crispy and delicious is by steaming, smashing, and then roasting with parmesan to make them nice and crispy.

This works well because by smashing them you create more surface area that can brown and become delicious. Parmesan also helps make a delicious crust and umami.

Ingredients:

  • 2 lbs whole brussels sprouts, ends trimmed off
  • 3 tbsp olive oil
  • salt and pepper to taste
  • 1/3 cup grated parmesan
  • 1 lemon, juiced

Preparation:

STEP 1.

Preheat the oven to 400°F.

STEP 2.

In a steamer pot, steam the brussels sprouts for 8-10 minutes until they are fork tender. Drain and dry on paper towels.

STEP 3.

Using a bench scraper or flat object, smash the brussels sprouts until they are flat-ish. Place in a bowl.

STEP 4.

Coat the brussels sprouts in olive oil, salt, pepper, parmesan and lemon juice. Toss to coat.

STEP 5.

Spread onto a parchment lined sheet tray and make sure there is space between each brussels sprout, this will mean more browning. Transfer to the oven and roast for 20 minutes. remove from the oven and flip over, cook for another 10-15 minutes until desired browning is reached.

STEP 6.

Remove from the oven and serve!
