Creamed corn is one of those dishes that has a horrible reputation because of it’s nasty version we all had when we were kids. I remember being so grossed out by the creamed corn that came from a can that I refused to eat. But when you make it from scratch, it is actually quite delicious and the perfect winter side dish!

Ingredients:
- 3 tbsp butter
- 1 onion, diced
- 1 tsp salt
- 1/2 tsp pepper
- 5 garlic cloves, minced
- 1.5 cups heavy cream
- 1 tsp sugar
- 2, 16 oz cans of corn, drained
- 1 cup feta
- 1 tbsp chives, minced for garnish
Preparation:
STEP 1.
In a pot over medium heat, melt the butter. Once bubbling, add the onion and sauté until cooked through. Adding 1/2 tsp of salt and pepper as you sauté. Once cooked through, stir in the minced garlic and sauté another 2 minutes.
STEP 2.
Stir in the corn and heavy cream and bring it up to a low simmer. Season with 1/2 tsp of salt and the sugar. Simmer for 12-15 minutes on low heat, or until the heavy cream has reduced by half and is thickened. Turn off the heat.
STEP 3.
Stir in the feta crumbles until incorporated. Taste for seasoning and adjust accordingly.
STEP 4.
Serve and garnish with chives!
