
One of my favorite desserts is a gooey chocolate lava cake. I remember going to Chili’s and always ordering this for dessert growing up. Now I like to make a healthier version that is gluten free and high protein! I like to use Isopure’s Whey Protein in this recipe and you cannot even tell it is higher protein.

Key Ingredients & Substitutions:
- Butter – You can use whole butter or coconut oil here.
- Semi Sweet Chocolate Chips – Use semi sweet or dark chocolate of choice.
- Eggs – No substitutions here.
- Sugar – I use white sugar for this, but you can use any sugar of choice.
- Almond Flour – This it the only flour in the dish, no substitutions!
- Isopure Dutch Chocolate Whey Protein – No substitutions, can omit if needed.

Protein Chocolate Lava Cake

Serves: 4-6
Ingredients:
- 1/2 cup butter, plus 1 tbsp for ramekins
- 6 oz semi sweet chocolate chips
- 2 large egg yolks
- 2 large eggs
- 1/4 cup sugar plus 1 tbsp for ramekins
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 Tbsp almond flour
- 1 scoop Isopure Dutch Chocolate Whey Protein
- 2 Tbsp powdered sugar, for dusting
Preparation:
STEP 1.
Preheat the oven to 425°F.STEP 2.
STEP 2.
Butter 6 oz oven safe ramekins and then coat in sugar. This will prevent the cake from sticking. Set aside.
STEP 3.
In a double boiler in a metal bowl, or in the microwave, melt the butter and chocolate together, stirring continuously until melted. Set aside.
STEP 4.
In a separate bowl, whisk together the egg yolks, eggs, sugar, vanilla and salt for 2 minutes, until slightly thickened.
STEP 5.
Stir in the almond flour, Isopure protein powder and the melted chocolate mixture until smooth. The batter should be fairly thick.STEP 6.
STEP 6.
Pour the batter into 4-6 ramekins and place on a sheet tray.
STEP 7.
Transfer to the oven and bake for 12-14 minutes. They are done when the edges are set. Remove from the oven.
STEP 8.
Cool for one minute and then use a butter knife to go around the sides of the cake.
STEP 9.
Flip the cakes onto a flat surface and dust with powdered sugar. Serve immediately and enjoy!
