
As a chef, one of the last things I want to do is cook a crazy meal for myself after cooking all day for other people. I usually want something that is quick, healthy and easy to make. Because of this I often turn to my instant pot for quick dinners. One that I have been making non stop this past month is this chipotle shredded chicken. It is the perfect textures and flavors together that makes me want to eat a whole bowl of this. It makes for the perfect meal prep as well, I am always eating it on salads, rice and tacos!
Key Ingredients & Substitutions:
- Boneless, Skinless Chicken Thighs – This cut is the best for this recipe. It is super moist and shreddy when cooked in the instant pot. You can also do bone in, skin on. I would avoid breast because it tends to dry out.
- Can Crushed Tomatoes – You can also use diced tomatoes or whole tomatoes that you blend.
- Chipotle Peppers In Adobo – You can also use chipotle powder here, but I find chipotle peppers in adobo are much more flavorful.
- Garlic Powder, Cumin Powder, Coriander, Oregano – These are the spices used for this dish, I would not omit if you can!

Instant Pot Chipotle Chicken
Prep Time: 15 minutes
Cook Time: 2 Hours
Total Time: 2 Hours 15 minutes
Serves: 4-6
Ingredients:
- 1.5 lbs chicken thighs, boneless and skinless
- salt and pepper to taste
- 2 cups canned crushed tomatoes
- 2 chipotle peppers in adobo (if you like it spicier blend these or chop these up, if you like mild, keep them whole)
- 1/2 tsp garlic powder
- 2 tsp cumin
- 1/2 coriander
- 2 tsp oregano
- cilantro for garnish
Preparation:
STEP 1.
Season the chicken with salt and pepper and add to an instant pot.
STEP 2.
Into the instant pot, stir in the canned crushed tomatoes, chipotle peppers, garlic powder, cumin, coriander, oregano and a teaspoon of salt. Stir to coat the chicken.
STEP 3.
Add the lid and cook on high pressure for 30 minutes. Let the steam naturally release and then remove and shred the chicken.
STEP 4.
Serve with the sauce and garnish with cilantro, enjoy!
