Mexican Inspired Red Rice

With Cinco De Mayo coming up I am getting all of my favorite Mexican recipes together so I can celebrate. One of my favorite rice dishes in the world happens to be Mexican style red rice that they always pair with beans at a Mexican restaurant and it will definitely be on my table on May 5th!

Key Ingredients & Substitutions:

  • Long Grain Rice – I like to use jasmine rice here, but any rice will work!
  • White Onion + Garlic – These are the aromatics that help flavor the rice, try not to skip, but you can use any color onion here.
  • Tomato Sauce – This is half the the liquid used to simmer the rice and turn it that red flavor. You can also use canned diced tomatoes.
  • Chicken Stock – You can use any stock here or water.
  • Cumin + Chili Powder – These aren’t a must, however they do take this rice up a level.

Mexican Inspired Red Rice

Prep Time: 10 minutes

Cook Time: 22 minutes

Total Time: 32 minutes

Ingredients:

  • 2 tbsp avocado oil
  • 1 white onion, diced
  • salt and pepper to taste
  • 5 cloves garlic, minced
  • 1 cup long grain rice, such as jasmine rice, rinsed until the water runs clear
  • 1 cup tomato sauce, canned
  • 1 cup chicken stock
  • 1/4 cup cilantro, minced for garnish

Preparation:

STEP 1.
In a pot over medium heat, add the avocado oil and once warm add the onion. Saute until translucent and cooked through, adding salt and pepper as you go. It takes around 5-7 minutes. Once cooked, stir in the garlic and rice and toast for 2 minutes until fragrant.

STEP 2.
Stir in the tomato sauce, chicken stock, cumin and chili powder. Season with salt and pepper to taste. Bring up to a low simmer and top with a lid. Cook on low for 18 minutes.

STEP 3.
Remove the lid once the timer is done and check for doneness. Stir to fluff the rice.

STEP 4.
Stir in the cilantro and serve!
