Garlic Butter Potatoes

Sometimes the simplest recipes are the best. This is the ultimate lazy day potato dish with minimal ingredients that still taste amazing!

Key Ingredients & Substitutions:

  • Gold Potatoes – I love a small baby gold potato here because they are waxy and moist. However, you can use any small potato for this dish.
  • Butter – The butter here is used to saute the potatoes and brown / make sweet. You can also just use olive oil or avocado oil here.
  • Garlic – Freshly minced garlic is best here! If you are in a pinch use garlic powder.
  • Fresh Lemon Juice – Don’t you dare use jarred lemon juice, it just isn’t good! Omit if you don’t have!
  • Parsley – This is used as a garnish, you can omit if needed.

Garlic Butter Potatoes

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Ingredients:

  • 1 lb baby gold potatoes
  • salt and pepper to taste
  • 3 tbsp butter
  • 6 garlic cloves, minced
  • 1/2 lemon, juiced
  • 2 tbsp minced parsley, for garnish

Preparation:

STEP 1.
Bring a pot of water up to a boil and add a few generous pinches of salt. Add the potatoes and boil for 15-20 minutes, until fork tender and cooked through. Strain and dry.

STEP 2.
Cut the potatoes into bit size pieces.

STEP 3.
In a large saute pan over medium heat, add the butter. Once melted and bubbling, add the potatoes. Season with 1-2 pinches of salt and pepper all over. Saute until golden brown and the butter starts to brown. Add the minced garlic and saute another 2 minutes. Add the lemon juice and turn off the heat.

STEP 4.
Serve and garnish with parsley, enjoy!
