Sometimes the simplest recipes are the best. This is the ultimate lazy day potato dish with minimal ingredients that still taste amazing!
Key Ingredients & Substitutions:
- Gold Potatoes – I love a small baby gold potato here because they are waxy and moist. However, you can use any small potato for this dish.
- Butter – The butter here is used to saute the potatoes and brown / make sweet. You can also just use olive oil or avocado oil here.
- Garlic – Freshly minced garlic is best here! If you are in a pinch use garlic powder.
- Fresh Lemon Juice – Don’t you dare use jarred lemon juice, it just isn’t good! Omit if you don’t have!
- Parsley – This is used as a garnish, you can omit if needed.
