
Chicken Larb is probably one of the most flavorful ground chicken dishes out there and is one of my go to’s for an easy dinner. It is a Thai chicken dish that includes a lot of fresh herbs, aromatics and lime juice, which is why it is so flavorful. It is typically served with Thai sticky rice or lettuce cups. I personally love it over a salad or rice for an easy weeknight dinner.
Key Ingredients & Substitutions:
- Ground Chicken – You can also use ground turkey here. Make sure not to get too lean of chicken or it will be dry.
- Shallots – I like to thinly slice shallots for this recipe, in a pinch you can use an onion.
- Thai Chili Pepper – Now these are quite spicy, so if you cannot do spice, omit!
- Fish Sauce – This is a must in this recipe and one of the main things that flavors the chicken and gives it that umami flavor. No subs!
- Fresh Lime Juice – Make sure to use lime juice from fresh limes and not the jarred kind! It makes a difference.
- Mint, Cilantro, Green Onions – These are the herbs used in this dish. It is a very herb heavy dish, and you can omit or add any herb that you like.

Thai Chicken Larb

Serves: 4-6
Ingredients:
- 2 tbsp avocado oil
- 2 shallots, thinly sliced
- salt
- 1 Thai pepper, minced
- 1 lb ground chicken
- 1 tbsp fish sauce
- 2 limes, juiced
- 1/4 cup mint leaves, sliced
- 3 green onions, sliced
- 1/4 cup cilantro, sliced
- 1/4 cup peanuts, chopped
Preparation:
STEP 1.
In a large saute pan over medium heat, add the avocado oil and once warm add the shallots. Saute until cooked through, adding a few pinches of salt as you go. Once cooked, add the minced Thai pepper and saute another 2 minutes until fragrant.
STEP 2.
Add the ground chicken and break up into small pieces. Saute until browned and cooked through. Add a couple of pinches of salt as you saute.
STEP 3.
Once cooked, add the fish sauce and lime juice and saute another 3-5 minutes to combine flavors.
STEP 4.
Turn off the heat and stir in the herbs and peanuts. Serve and enjoy!
