
If you’re a fan of cauliflower and curry, meet your new favorite side dish! This warm cauliflower curry salad is tangy, flavorful, and delicious. It’s also very healthy and easy to make!
Key Ingredients & Substitutions:
- Cauliflower Florets – This is the main ingredient of this dish. You can also use other vegetables of choice, just know cooking time would differ.
- Curry and Cumin – These are the main spices used in this dish! Don’t omit.
- Golden Raisins – I love a dried fruit to add sweetness and different texture. Normal raisins are also great here.
- Cilantro – A good salad has a fresh herb. Cilantro pairs perfectly with curry powder, however if you dislike it you can use green onions.

Curried Cauliflower
Prep Time: 10 minutes
Cook Time: 35 minutes
Total Time: 45 minutes
Serves: 4
Ingredients:
- 1 lb cauliflower florets, or one head of cauliflower
- 1/4 cup olive oil
- 1 tsp salt
- 1.5 tsp curry powder
- 1 tsp cumin
- 1 lime, juiced
- 1/2 cup golden raisins
- 1/4 cup cilantro, minced
Preparation:
STEP 1.
Preheat the oven to 400°F.
STEP 2.
Add the cauliflower to a bowl and coat with olive oil. Add the salt, curry powder, and cumin and mix in. Pour onto a parchment lined sheet tray and make sure there is space between each piece – this will ensure it gets crispy.
STEP 3.
Roast in the oven for 20 minutes. After 20 minutes flip the cauliflower over and then roast for another 15 minutes, or until crispy.
STEP 4.
Remove from the oven and place the cauliflower in a bowl. Coat in lime juice and mix in the golden raisins and cilantro. Serve and enjoy!
