Pickled Radishes

am a huge radish hater, except when they are pickled. I recently got radishes by surprise in my farm box and did not want them to go to waste. So what do we do? We pickle them! Pickling completely changes the flavor and texture of vegetables, which is why it is so great when you get a vegetable you dislike. I love using these on top of salads, tacos, and more.

Key Ingredients & Substitutions:

  • Radishes – I used radishes here obviously out of need to et rid of them, but any vegetable works!
  • White Wine Vinegar – I like white wine vinegar for the flavor. White vinegar is usually used here, but any vinegar works.
  • Sugar – This is for the flavor, omit if needed.
  • Salt and pickling spices – Don’t omit, completely changes the flavor of the pickles!

Pickled Radishes

Prep Time: 15 minutes

Cook Time: 2 Hours

Total Time: 2 Hours 15 minutes

Serves: 4-6

Ingredients:

  • 1 bu radishes
  • 1/2 cup white wine vinegar
  • 1/2 cup water
  • 1 tbsp sugar
  • 2 tsp salt
  • 1/2 tsp peppercorns
  • 1/2 tsp mustard seeds

Preparation:

STEP 1.
Thinly slice / mandolin the radishes and place in a mason jar.

STEP 2.
In a pot, add the vinegar, water, sugar, salt, peppercorns and mustard seeds. Turn the heat to medium and bring the mixture to a simmer. Turn off the heat once the sugar and salt have dissolved.

STEP 3.
Pour the hot mixture into the jar with radishes and top with a lid. Transfer to the fridge and refrigerate for 12 hours to pickle.

STEP 4.
Store for up to two weeks.
