Zucchini Fritti

I have a confession… I’m not a huge fan of zucchini. Most of the time, it can be watery and bland. But as someone who cares about cooking seasonally, zucchini is a big part of my summers. So I have to get creative with recipes that actually celebrate and enhance it—like this one: zucchini fritti.

Zucchini fritti is an Italian inspired dish made with thinly sliced or julienned zucchini that’s lightly breaded and fried until crispy. The name translates to “fried zucchini” in Italian. Frying vegetables is a common tradition in the southern regions of Italy, where you’ll often find this dish.

Key Ingredients & Substitutions:

  • Zucchini – You can also use yellow squash here.
  • Avocado Oil – I like using this oil for frying because of it’s high smoke point and neutral flavor. If you want to make it super Italian, use olive oil.
  • Flour – I use gluten free 1-1 flour here, but if you are not gluten free, use all purpose flour.

Zucchini Fritti

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Ingredients:

  • 2 large zucchini, cut into juliennes
  • salt
  • 1 cup gluten free 1-1 flour
  • 2 large eggs
  • 2-3 cups avocado oil

Preparation:

STEP 1.
Place the sliced zucchini in a bowl and season with salt so it is evenly coated. Sit for 15 minutes to draw out the water.

STEP 2.

Use a towel and work in batches to squeeze the water out of the zucchini, set aside.

STEP 3.
Set up the breading station. In a bowl add the flour. Season with salt. In another bowl, whisk together the eggs and 1/4 cup of water to create the egg wash. Bread the zucchini by dipping into the egg wash and then into the flour to coat. Evenly coat all of the zucchini.

STEP 4.
In a small pot over medium heat, add 2-4 inches of avocado oil. Heat the oil to 350°F. Once hot, add a few spoonfuls of the breaded zucchini and fry. Stir occasionally so they don’t clump together. Fry for 2-4 minutes until they are golden brown. Remove and set on a rack over a sheet tray to dry and season immediately with salt. Do this with all of the zucchini.

STEP 5.

Serve and enjoy!
