Jalapeno Cilantro Red Cabbage Slaw

Cabbage slaws without mayo are infinitely better than those with mayo. Make a delicious creamy vinaigrette and you have a slaw that isn’t incredibly suspicious when you bring it to a potluck! Can you tell I hate mayo? In all seriousness, this jalapeno lime cabbage slaw is perfect with tacos, burrito bowls, or just as an awesome side! It is flavorful and healthy.

Key Ingredients & Substitutions:

  • Red Cabbage – Green cabbage works here too!
  • Red Onion – This adds a nice flavor and crunch. You can use a white onion here too.
  • Carrots – Grate them or thinly slice them for the best texture.
  • Cilantro – If you don’t like cilantro you can omit, just note it changes the flavor of the whole slaw!
  • Limes – Make sure to use fresh limes that have been juiced for this recipe, no jarred crap.
  • Jalapeno – You can also use a serrano pepper here if you want it spicier.

Jalapeno Cilantro Red Cabbage Slaw

Ingredients:

  • 1 small red cabbage, mandolin thinly
  • 1/2 red onion, diced
  • 2 carrots, grated
  • 1/4 cup cilantro, minced

Jalapeno Cilantro Lime Dressing:

  • 2 limes, juiced
  • 1 jalapeno, minced
  • 2 garlic cloves, minced
  • 1 tbsp dijon mustard
  • 1 tbsp honey
  • 1/2 tsp cumin
  • salt to tate
  • 1 cup avocado oil

Preparation:

STEP 1.
Combine the cabbage, red onion, carrots and cilantro in a bowl together.

STEP 2.
Make the dressing. Using an immersion blender or blender, blend together the lime juice, jalapeno, garlic, mustard, honey, cumin and salt until combined. Keep blending and slowly drizzle in the avocado oil until desired thickness and texture is reached. Taste for seasoning and add more salt or oil as needed.

STEP 3.
Stir the dressing into the cabbage mixture and mix well. Serve and enjoy!
