Balsamic Roast Beets

I have met tons of people that I have cooked for who absolutely hate beets until I cook them for them. Beets are hated because the majority of time they are not cooked correctly. If I had to convert you to being a beet lover, I would make you these balsamic roasted beets.

Key Ingredients & Substitutions:

  • Beets – Golden beets are my favorite beet, they have a less earthy flavor then red beets which is a good way to like beets. But you can use any beet here.
  • Balsamic Glaze – Use an aged balsamic glaze for the best flavor.
  • Chopped Hazelnuts – I like these to add a nice texture and flavor. However, you can use any nut of choice.
  • Maldon Sea Salt – This is a perfect finishing salt because of the interesting texture and crunch it adds, but you can use any salt here.

Balsamic Roast Beets

Prep Time: 10 minutes

Cook Time: 1 Hour 15 minutes

Total Time: 1 Hours 25 minutes

Serves: 4-6

Ingredients:

  • 4 beets
  • salt and pepper
  • 3 tbsp extra virgin olive oil
  • 3 tbsp balsamic glaze
  • 1/4 cup hazelnuts, chopped

Preparation:

STEP 1.
Preheat the oven to 415°F.

STEP 2.
Place the washed beets on a parchment lined sheet tray. Cover with foil and roast in the oven for 1 hour and 15 minutes, or until fork tender. Cool for 15-20 minutes.

STEP 3.
Peel the beets with a vegetable peeler or pairing knife, then slice the beets into wedges.

STEP 4.
Add the beets to a serving bowl and coat with the olive oil, balsamic, maldon and hazelnuts. Serve and enjoy!
