Milanese Saffron Risotto

I’m biased toward thinking Milanese Saffron Risotto is the best risotto out there after spending time working in Italy. Milanese saffron risotto, or Risotto alla Milanese, is a classic northern Italian dish from Milan known for its vibrant golden color and creamy texture. Yes, it’s simple, but Italians are masters at making simple ingredients shine. It’s some of the best risotto you’ll ever have!

Key Ingredients & Substitutions:

  • Arborio or Carnaroli Rice – If you want the best kind of rice for risotto, these two are top tier. They are a short grain starchy rice which make the risotto creamy.
  • White Wine – Pick a dry white wine for the best flavor and balance in risotto. If you cannot cook with wine, finish the risotto instead with lemon.
  • Chicken Stock – Choose a good chicken stock to cook this rice. You can also use vegetable or other stock of choice.
  • Saffron – This is what gives the risotto it’s bright yellow color. If you omit, just note that it won’t be golden.
  • Parmesan – This is used to finish the risotto. You can use any hard cheese of choice here.

Ingredients: 1. 2 tbsps butter  2. 1/2 onion, minced 3. Salt to taste 4. 3 garlic cloves, minced 5. 1/2 cup white wine 6. 1 cup arborio rice 7. Pinch of saffron threads 8. 1 quart to 1.5 quarts hot chicken stock 9. 1/2 cup parmesan cheese, grated Instructions: 1. In a medium pot over medium heat, add the butter. Once bubbling, add the onions and saute until cooked through, salting as you go. Stir until cooked, around 4-6 minutes. Stir in the garlic and saute another 2 minutes.  2. Stir in the white wine and the rice. Stir until the wine is absorbed. 3. Add 2 ladles of hot stock into the rice. Add the saffron and salt to taste. Stir continuously until the stock is absorbed. Once absorbed, add two more ladles of stock. Stir and do this until the rice is al dente and cooked. 4. Turn off the heat and stir in the parmesan cheese. Ingredients:

  • 2 tbsp butter
  • 1/2 onion, minced
  • salt to taste
  • 3 garlic cloves, minced
  • 1/2 cup white wine
  • 1 cup arborio rice
  • pinch of saffron threads
  • 4 cups to 6 cups of chicken stock, heated
  • 1/2 cup parmesan cheese

Preparation:

STEP 1.
In a medium pot over medium heat, add the butter. Once bubbling, add the onions and saute until cooked through, salting as you go.

STEP 2.
Stir until cooked, around 4-6 minutes. Stir in the garlic and saute another 2 minutes.

STEP 3.
Add 2 ladles of hot stock into the rice. Add the saffron and salt to taste. Stir continuously until the stock is absorbed. Once absorbed, add two more ladles of stock. Stir and do this until the rice is al dente and cooked.

STEP 4.
Turn off the heat and stir in the parmesan cheese. Taste for seasoning and serve!
