French Carrot Salad with Dijon Vinaigrette

Salade de Carottes, also known as a simple French carrot salad, is one of the best carrot side dishes out there. If you’re a fan of salads and delicious vinaigrettes, this is a fun one to try. The grated carrots combined with raisins and shallots create great texture, while the Dijon forward vinaigrette is the perfect tangy dressing that brightens up the entire dish.

Key Ingredients & Substitutions:

  • Carrots – I like to find thicker carrots for easier grating here. You can also use parsnips here for a fun twist on this recipe.
  • Golden Raisins + Shallots – These are the other base components to this salad. You can get creative here and use any dried fruit or crunchy add ins. I love figs, cranberries, red onions, and nuts here.
  • Lemons – Fresh lemon juice is the best here for the vinaigrette. You can also use a white wine vinegar.
  • Dijon – Make sure to pick a good dijon mustard for this dressing. 
  • Olive Oil – This is used to make the dressing, you can also use a neutral oil like avocado oil.

French Carrot Salad with Dijon Vinaigrette

Ingredients:

  • 1 lb carrots, peeled and grated
  • 1 shallot, minced
  • 1/2 cup golden raisins

Dressing:

  • 1 lemon, juiced
  • 1 Tbsp dijon mustard
  • 2 garlic cloves, minced
  • 1 tbsp honey
  • 1/3 cup extra virgin olive oil
  • salt to taste

Preparation:

STEP 1.
Grate the carrots and place in a mixing bowl along with the shallot and golden carrots.

STEP 2.
Make the dressing. In a new bowl, whisk together the lemon juice, dijon mustard, garlic, honey and a pinch of salt. While whisking, slowly drizzle in the olive oil to emulsify. Taste for seasoning and adjust accordingly.

STEP 3.
Mix the dressing into the salad and season the salad with salt if needed. Serve and enjoy!
