- Lemons – Fresh lemon juice is the best here for the vinaigrette. You can also use a white wine vinegar.
- Dijon – Make sure to pick a good dijon mustard for this dressing.
- Olive Oil – This is used to make the dressing, you can also use a neutral oil like avocado oil.

French Carrot Salad with Dijon Vinaigrette

Ingredients:
- 1 lb carrots, peeled and grated
- 1 shallot, minced
- 1/2 cup golden raisins
Dressing:
- 1 lemon, juiced
- 1 Tbsp dijon mustard
- 2 garlic cloves, minced
- 1 tbsp honey
- 1/3 cup extra virgin olive oil
- salt to taste
Preparation:
STEP 1.
Grate the carrots and place in a mixing bowl along with the shallot and golden carrots.
STEP 2.
Make the dressing. In a new bowl, whisk together the lemon juice, dijon mustard, garlic, honey and a pinch of salt. While whisking, slowly drizzle in the olive oil to emulsify. Taste for seasoning and adjust accordingly.
STEP 3.
Mix the dressing into the salad and season the salad with salt if needed. Serve and enjoy!
