Brussels Sprout, Cranberry & Goat Cheese Salad

When it comes to salads I don’t mess around! I am a huge salad lover, but only if it is hearty, packed with varying flavors, and tons of great textures. My favorite dish on the Thanksgiving table is a salad just like this shaved brussels sprout salad. This salad can easily be made ahead of time since brussels hold up much better than lettuce as well, making it perfect for a pot luck.

Key Ingredients & Substitutions:

  • Brussels Sprouts – Either shaved thinly on a mandolin or a food processor. You sometimes can find them shaved at the stores, just make sure it isn’t cut too thick.
  • Dried Cranberries – I also love using golden raisins here!
  • Pecans – Walnuts or my homemade maple pecans are excellent here.
  • Goat Cheese – Make sure to buy goat cheese crumbles for the best texture.
  • Apple – I use a pink lady or honeycrisp here! Pears are also a great replacement.

Brussels Sprout, Cranberry & Goat Cheese Salad

Ingredients:

  • 20 oz Brussels Sprouts, thinly shaved
  • 1 cup pecans
  • 1 cup dried cranberries
  • 1 cup goat cheese
  • 1 apple, diced

Balsamic Vinaigrette

  • 1/2 cup balsamic vinegar
  • 1 Tbsp dijon mustard
  • 1 Tbsp honey
  • 2 garlic cloves, grated
  • 1 tsp salt
  • 1 tsp Italian seasoning
  • 1 – 1.5 cups avocado oil

Preparation:

STEP 1.
In a large bowl add your brussels sprouts, pecans, cranberries, goat cheese and apple.

STEP 2.
For dressing, blend together the balsamic, dijon mustard, honey, garlic, salt, and Italian seasoning. While blending, slowly pour in the avocado oil to emulsify and thicken. Add more if you like it thicker. Season to taste.

STEP 3.
Add the dressing to the salad and massage in – note you may not need all of it, add until desired dressing.
