Balsamic Chicken Salad

This is my go to meal for days when I absolutely do not want to cook. Enter rotisserie chicken doing all the work for us. I shred it, toss it with a homemade balsamic dressing instead of mayo, and suddenly chicken salad is exciting again. It’s way more flavorful and not heavy or gloopy like the classic version. The apples, pecans, and red onion bring the crunch, the golden raisins add a little sweetness, and somehow this turns into a meal that feels put together with basically zero effort. Even if you love mayo, trust me, you should try this one.

Key Ingredients & Substitutions:

  • Rotisserie Chicken – Diced or shredded rotisserie chicken is the best here! Of course you could roast your own chicken to use here, but I like to work smarter not harder.
  • Apples – I like a sweet honeycrisp or pink lady apple here! Use any apple of choice or other fresh fruit like a pear or orange.
  • Pecans – Use any nut here of choice!
  • Goat Cheese – Any goat cheese works here! Substitute with feta if desired.
  • Raisins – Any dried fruit works here.
  • Dill and Basil – I love using a ton of fresh herbs in a chicken salad. It freshens it up so much.

Ingredients:

  • 1 rotisserie chicken, meat removed and diced
  • 1 apple, diced
  • 1/2 cup goat cheese, diced
  • 1/2 cup pecans
  • 1/2 cup raisins
  • 1/4 cup dill, minced
  • 1/4 cup basil, minced

Balsamic Vinaigrette:

  • 1/3 cup aged balsamic vinegar
  • 2 Tbsp dijon mustard
  • 1 Tbsp honey
  • 1 garlic clove, grated
  • 1/2 tsp salt
  • 1 tsp Italian seasoning
  • 3/4 – 1 cup avocado oil

Preparation:

STEP 1.
Add the rotisserie chicken, apple, goat cheese, pecans, raisins dill and basil to a large mixing bowl.

STEP 2.
Make the dressing. Blend together the balsamic vinegar, dijon mustard, honey, salt, and Italian seasoning. While blending, slowly drizzle the avocado oil in until desired thickness is reached. Taste for seasoning and adjust accordingly.

STEP 3.
Stir the dressing into the chicken mix. You may not use all of it, stir in a little at a time until desired amount is reached. Mix it all together and taste for seasoning, adjust accordingly.

STEP 4.
Serve and enjoy!
