Seared Ahi Tuna & Ginger Scallion Sauce

If I had to pick one seafood that’s the easiest to cook, I’d say seared ahi tuna. Because it cooks so quickly, it’s nearly impossible to mess up. Still, I find a lot of people are intimidated to make it—and I get it, since you’re probably paying around $26 a pound for it. But trust me: if you follow this recipe, you’ll have restaurant-quality ahi tuna every time!

Key Ingredients & Substitutions:

  • Ahi Tuna – Make sure to get high quality sushi grade tuna here. It is mostly raw so it needs to be sushi grade or previously frozen.
  • Sesame Seeds – These are to crust the ahi tuna and add a nice crunch. You can also use something like everything but the bagel seasoning here.
  • Tamari – This is gluten free soy sauce. I like to choose a less sodium one so it isn’t overpowering. You can also use soy sauce here.
  • Sesame Oil and Rice Vinegar – These are used to balance the sauce. You can also use peanut oil or lime juice here.
  • Giner and Scallions – These are the main flavoring ingredients of the sauce, don’t omit, but you can add garlic here!
  • Honey – This is used to counter the salty tamari. You can also use sugar here.

Ingredients:

  • 1 6-10 oz ahi tuna, sushi grade
  • salt
  • 2 Tbsp white sesame seeds
  • 2 Tbsp black sesame seeds
  • 1 tsp red pepper flakes
  • 1 Tbsp avocado oil

Sauce Recipe

  • 1/4 cup tamari, 50% less sodium
  • 1 Tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 tsp ginger, grated
  • 2 green onions, minced
  • 1 Tbsp honey

Preparation:

STEP 1.
Season the tuna with salt on all sides. Then in a bowl mix together the sesame seeds and pepper flakes. Coat the tuna evenly in this mixture, set aside.

STEP 2.
For the sauce, whisk all the sauce ingredients together and taste for seasoning. Adjust as needed and set aside.

STEP 3.
Sear the tuna. In a stainless steel pan over medium high heat, add avocado oil. Once that is hot. Add the tuna and sear on all sides for roughly 20 seconds to form a golden crust. Do this on all sides and remove from the pan.

STEP 4.
Slice the tuna and serve with the sauce. Enjoy!
