Brown Sugar Glazed Carrots

I am a lover of carrots in all forms, but my absolute favorite is glazed carrots. Glazed carrots were actually the first vegetable I ever liked, my mom smothering them in maple syrup and butter just to get me to eat them. And I might be 25 years older, but I still love my carrots that way. Typically I make this with maple syrup, but I recently made my recipe with brown sugar and it honestly might be even better.

The brown sugar, thyme, and butter combine to make a perfect sweet / savory glaze that coats the carrots and adds amazing flavor. They also cook incredibly quickly, which is a plus. If you are a lover of carrots, you need to try these.

Key Ingredients & Substitutions:

  • Butter – The rich base of the glaze. You can also use oil here, just use 2 Tbsp.
  • Carrots – The star of the dish. Rainbow carrots make a beautiful presentation too. You can also use parsnips or root vegetables.
  • Brown Sugar – Adds sweetness and helps create the glossy glaze. Maple syrup is a great natural substitute.
  • Thyme – Adds a subtle earthy, herby note. Rosemary works well too for a slightly bolder flavor.
  • Chicken or Vegetable Stock – Forms the base of the glaze liquid. Vegetable stock keeps it fully vegetarian.

Brown Sugar Glazed Carrots

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Ingredients:

  • 3 tbsp butter, cubed
  • 2 lbs carrots, peeled and oblique cut
  • 5 sprigs of thyme
  • salt and pepper to taste
  • 1/4 cup brown sugar
  • 1/2 cup chicken stock or vegetable stock

Preparation:

STEP 1.
In a large pan over medium heat, melt the butter and add the carrots, thyme and salt. Cover the pan with a lid or foil, and steam the carrots for 3 – 5 minutes.

STEP 2.
Remove the lid and add the maple syrup and chicken stock, just enough to where the carrots are half submerged in liquid. Bring to a simmer and cover the pan for another 5 minutes. Make sure to salt as you go.

STEP 3.
Uncover and let the carrots simmer, reducing the liquid until it is completely dry and syrupy consistency, around 10 -15 minutes.

STEP 4.
Remove any of the thyme sprigs and enjoy!
