It is a tradition for me that on weekends I make an extra special breakfast for myself. It varies between cauliflower oatmeal, smoothie bowls, and my favorite, my Paleo Protein Pancakes. These pancakes are high in protein, have no flour or sugar, and always hit my craving for a sweeter breakfast just right. I think of them as a mix between crepe and pancake, with the portion coming out to be a perfect size for yourself, around 5 pancakes high.

I top them with seasonal fruit, nuts and nut butters. Since it is winter I am on a Persimmon kick with pumpkin spice coconut butter and coconut flakes. But you can throw just about any fruit and nuts and they go great with these pancakes. With three simple ingredients these healthy pancakes are a must!

Ingredients:

  1. 2 eggs
  2. 1 medium sized banana
  3. 2 scoops of vanilla collagen. I use Primal Kitchen’s vanilla coconut collagen or Vital Proteins vanilla collagen
  4. Seasonal fruit/nuts/butters

*Yields 5 small pancakes

Instructions:

  1. Mix all the ingredients together until completely smooth
  2. Heat a saute pan on medium/low heat, spray with cooking spray or oil
  3. Pour small circles onto the pan, do 1 to 2 at a time.
  4. Once they start bubbling and lifting from the pan, 1-2 minutes, flip and cook through another 1 to 2 minutes.
  5. Stack ’em high and top with your favorite fruits/nuts/and nut butters!
