‘Tis the best time of the year for food, Fall! And with fall comes my favorite seasoning, pumpkin spice. I do not care how “basic” pumpkin spice is, we can all admit that it is delicious and reminds us of the best parts of Fall.

With my crazy busy schedule in my last semester of culinary school at the CIA, I barely have time to cook for myself. Getting home at 11 pm after a day of cooking, I definitely don’t have the time or energy to cook a great meal for myself that will take another hour to make. So I have resorted to items like homemade protein bars, quick salads, or sweet treats like these to get me through the day.

This morning I woke up desperately craving Pumpkin goodies so whipped up my go to Pumpkin Spice Protein Ball recipe. It also is also filled with tons of healthy fats, and happens to be AIP if you leave out the chocolate drizzle! Unlike a lot of protein balls, these are nut free for those sensitive to nuts or those who practice AIP. Whip them up in 10 minutes and freeze for continuous enjoyment of this great pumpkin season!

Ingredients:

  1. 1.25 cup coconut flour
  2. .5 cup cassava flour
  3. 1 scoop of collagen peptides
  4. 2 TB monk fruit powder or honey
  5. 2 TB pumpkin spice seasoning
  6. 1/2 tsp salt
  7. 1 tsp vanilla extract
  8. 1 can of pumpkin puree
  9. 1/4 cup coconut butter melted
  10. 1 and 1/4 to 1/2 cup coconut oil melted

Chocolate Drizzle

  1. 1/4 cup coconut oil melted
  2. 2 TB cacao powder

Instructions:

  1. Mix all the dry ingredients together in a bowl, coconut flour, cassava flour, collagen, monk fruit (if using).
  2. In separate bowl mix the rest of the ingredients (minus the chocolate drizzle ingredients.
  3. Combine the two and mix until you can form balls between your hands. If it is too powdery, add more coconut oil, if too oily, add more coconut flour.
  4. Line a sheet pan with parchment paper. Form the dough into balls in your hand and lay onto the parchment paper. Freeze for 20 minutes.
  5. While freezing combing the chocolate drizzle ingredients in a bowl until mixed.
  6. Drizzle the chocolate mixture over the top of the balls and freeze 30 minutes.
  7. Remove from freezer and enjoy! Store in freezer or refrigerator.
