On Christmas Eve I tested positive for Covid 19. I was crushed. I did everything right, I always wore masks, I didn’t see friends, I stayed in my house except for work, yet I somehow still got it. It started with a small tickle in my throat and has escalated to horrible headaches, shortness of breath, and worst of all, zero smell and taste. My worst fears are coming true, but I am doing everything I can to get my health back on track and get my taste back.

First thing was making sure I am getting the right nutrients in. I made a giant batch of chicken bone broth that I will be sipping over the next week of quarantine. Bone broth has tons of nutrients that help with things like gut health, bone health, cold recovery, etc. A lot of people buy bone broth, but it is much more nutrient dense when you make it at home, not to mention more delicious (not that I can taste it right now). Even if you’re not sick, sipping bone broth is a great thing to do for you health. I am also getting in all the right supplements like zinc, vitamin c, melatonin, and aspirin for blood clots.

Secondly I have started “smell training.” Research has shown that this is the only thing that could potentially help regain smell and taste. For smell training you take four different essential oils that you are familiar with and dampen a cloth / cotton pad and place in mason jars. I smell one at a time, imagining that item, picturing it in my head, trying to remember what the smell is like & do this for 30 seconds, then move on to the rest of the smells. I have started with lavender, frankincense, peppermint, and lemon. On day 4 I could faintly smell all four. I woke up today on day 5 and couldn’t smell any of them. This is super frustrating as a chef, but I am going to stick with it and am determined to get my taste back quickly.

If you have covid, a cold, upset stomach, or just want to be healthy, this bone broth should be on your table. This is an easy recipe that is very hands off and creates a ton of beautiful golden broth. Enjoy by heating in a mug or making into soup!

Ingredients:

5 lbs chicken back bones
1 lb chicken feet
8 gallons water
2 onions, chopped
2 large carrots, chopped
2 celery ribbs, chopped
2 tsp salt
6 garlic cloves, smashed
1 bay leaf
5 parsley stems

Preparation:

STEP 1.

Turn oven to 450*F. Roast chicken bones until golden brown, around 45 minutes. Remove and strain off the excess fat.

STEP 2.

In a large stockpot, add your chicken bones and feet to the pot. Cover with water and bring to a low simmer. Once simmering place lid on top and let that simmer for 14 hours. It is easiest to do this overnight and let it go.

STEP 3.

Once your broth has been simmering for 14 hours, add the remainder of your ingredients and simmer another 1 hour.

STEP 4.

Strain broth through a fine mesh strainer into a large bowl. Trash all of your bones and vegetables. Portion into quart deli containers / Tupperware.

STEP 5.

Store in the fridge for up to 1 week or freeze! Enjoy by reheating and adding touch of salt!
