Here is a how to on making a souffle. You can make it sweet by making it a chocolate souffle, or savory like this one with cheese.

The key to making a souffle is whisking the egg whites to stiff peaks and folding it in gently. This allows the air in there and for it to rise.

These are great for guests, but make sure you serve them quickly before the souffles deflate!

Ingredients:

  • 1 tbsp butter
  • 1 tbsp sugar
  • 4 eggs
  • 2 tsp sugar
  • 2 tbsp AP flour
  • dash of salt
  • 4 oz cream cheese
  • 2/3 cup shredded cheese of choice such as cheddar or jack

Preparation:

STEP 1.

Preheat oven to 400*F. Prep souffle ramekins by coating all sides and bottom with butter and then sugar, this prevents sticking.

STEP 2.

Separate egg yolks from whites in two bowls. In the yolk bowl add 2 tsp sugar, flour, salt, cream cheese and shredded cheese. Mix to combine and set aside. In the egg white bowl with a standing mixer or by hand, whisk egg whites to stiff peaks. Gently fold the egg whites into the yolk mixture. Pour into ramekins up to the very top and bake for 12 minutes.

STEP 3.

Remove from the oven once the souffles have risen and are golden brown. Serve immediately!
