Shakshuka is a Mediterranean / Middle Eastern dish of stewed tomaotes, eggs and spices. If you have never had it, it is a great brunch and breakfast dish that is also super healthy. It is great because you can add all kinds of vegetables and other ingredients to make it your own and is always delicious. It is also a one pot dish, so it has a super easy cleanup which we love!

Shakshuka is a great breakfast or brunch dish. You can make it your own by adding other vegetables, herbs and seasonings!

Ingredients:

  • Olive oil
  • 1 red bell pepper, diced
  • 1 shallot, diced
  • 4 garlic, minced
  • 1 tsp coriander
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 28 oz can whole peeled tomatoes, crushed with your hands into small pieces
  • 4 eggs
  • salt and pepper
  • cilantro for garnish

Preparation:

STEP 1.

In a stainless steel pan, over medium heat add olive oil to coat the bottom of the pan. Saute the bell pepper, salt as you go, around 5-7 minutes. Add the shallot once the bell pepper is softened and saute until cooked through, another 3 minutes. Add the minced garlic, coriander, cumin, paprika and saute until fragrant, around 2 minutes.

STEP 2.

Add the tomatoes to the pan and stir the ingredients together. Turn heat to medium low and salt all over. Simmer 10 minutes to develop flavor.

STEP 3.

Make four indentations in the stewed tomatoes where you want the eggs to go. Crack the eggs into the indentations and season them. Simmer for 10-15 minutes or until the whites of the eggs are cooked through. Remove from the heat and garnish with cilantro!
