I am a huge fan of pumpkin spice season. Not because I love PSLs, but because I could eat squash and pumpkins 24/7. So any chance I get to flavor food’s with pumpkin, I will.

These overnight oats are perfect for an easy breakfast on the go. They are filled with warming Fall spices that pair greatly with a morning cup of coffee as well. I had this for breakfast on repeat last week and couldn’t get enough of it!

I topped it with sautéed cinnamon apples, but also love it with fresh fruit and granola!

Ingredients:

  • 1 cup GF rolled oats
  • 1 tbsp chia seeds
  • 1/4 cup pumpkin puree
  • 1 cup almond milk
  • 1 tbsp maple syrup
  • 1 tsp pumpkin pie spice
  • optional garnish – sauteed apple in cinnamon

Preparation:

STEP 1.

Add all ingredients to a jar and shake it to combine. Refrigerate overnight and eat for breakfast.
