One of my favorite dishes to make is a classic pot roast, where the beef is shredded and super moist. There is nothing better in my mind than shredded meat. I also love that this is a budget friendly dish. The beef used for pot roasts is fairly inexpensive and can be under $20 for 6 portions of food!

A pot roast is a classic comfort food that’s perfect for warming you up on a cold day and will be perfect for this holiday season. It’s made by braising a tough cut of beef, such as chuck or round, along with vegetables and broth in a large pot or Dutch oven.

This is a great way to transform a tough and inexpensive cut of meat to a delicious creation!

Ingredients:

  • 2-3 lb chuck roast
  • salt and pepper
  • avocado oil
  • 1 yellow onion, chopped
  • 1 carrot, chopped
  • 1 celery rib, chopped
  • 6 garlic, minced
  • 3 tbsp tomato paste
  • 1 cup dry red wine
  • 2 bay leaves
  • a few sprigs of thyme
  • 2 cups beef or chicken stock
  • 1 lb carrots, peeled and cut into half inch rounds
  • 1 lb red or yellow potatoes, cut into half inch cubes
  • minced parsley for garnish
