Welcome to part one of my egg series! I am such a fan of cooking eggs, and there are so many fun ways to make them that I decided to make this into a series.

I am starting with one of my favorite and simple eggs, the scrambled egg!

There are a few different ways to make scrambled eggs, all of which I will be going over because they result in different textures. The first method we are going over is the slow cooked method, similar to what Chef Gordon Ramsay does.

Key steps to slow cooked scrambled eggs:

  • Use a nonstick bowl.
  • Don’t whisk before we start to cook, stir with a rubber spatula once they are on the heat.
  • Add butter or some fat in the beginning.
  • Cook over medium to low heat.
  • Stir for 30 seconds on the heat, 30 seconds off the heat.
  • Constantly stir.
  • Pull them off the heat while they are still a little bit runny.
  • Salt and season towards the end.

Reasons why the above steps are important for this method and texture of eggs:

  • We don’t want to whisk before cooking because this will result in larger curds and not the small creamy curds that you want from soft scrambled eggs.
  • Adding butter towards the beginning allows for creamier texture.
  • Cooking over low heat and 30 seconds on and off allows the process to be slow and results in creamier softer eggs.
  • Constantly stirring allows for the small curds.
  • Pulling them off the heat before they are done cooking is essential because they will continue to cook a little bit off the heat. And if you do not pull them off prior, they will overcook.
  • Some people say salting towards the end is essential for this because salt breaks down the eggs, I am still on the fence about this one, but will be experimenting with this further.

If you want even creamier eggs you can add creme fraiche or sour cream in the last minute of cooking. Top with garnish like minced chives!

  • 3 eggs
  • 2 tbsp butter
  • salt

Preparation:

STEP 1.

In a nonstick pan, add the eggs and butter. Place over medium to low heat and stir with a rubber spatula. Cook for 30 seconds on the heat, 30 seconds off the heat, stirring constantly. Do this until the eggs are just about to be done, slightly under, and turn off the heat, and salt the eggs. Serve and enjoy!
