I am a huge fan of salads that don’t feel like salads because all of the ingredients are so tasty. Nothing is worse than a salad that is mostly lettuce, dressing and one topping. To make a good salad, you need a variety of flavorful toppings that have varying textures and flavors. This Greek chopped salad achieves just that!
My favorite ingredients for a Greek chopped salad:
- Romaine lettuce – is a neutral flavor and has a crisp crunch.
- Tomatoes – I prefer halved cherry or grape tomatoes.
- Red onion – sliced or chopped.
- Feta cheese – I feel like this is essential in a Greek salad.
- Peperoncini – perfect pickle for this.
- Parsley
- Greek olives – or olives of choice, pitted and sliced.
- Chickpeas – I love to air fry them to make them crispy.

Ingredients:
- 1 cup chickpeas, drained
- 1 tbsp olive oil
- salt to taste
- 5 cups romaine lettuce, chopped
- 1/2 cup parsley, chopped
- 1/2 cup greek olives, pitted and chopped
- 1/2 cup red onion, chopped
- 1/2 cup grape tomatoes, chopped
- 1/2 cup peperoncini, chopped
- 1/2 cup feta cheese, crumbled
- Burnt lemon dressing
Preparation:
STEP 1.
Add chickpeas to an air fryer or sheet tray for the oven. Coat in olive oil and some salt. Air fry or roast at 400*F for 10-18 minutes until crispy and crunchy.
STEP 2.
Add all ingredients to a bowl, coat with the dressing and enjoy.
