I am a huge fan of salads that don’t feel like salads because all of the ingredients are so tasty. Nothing is worse than a salad that is mostly lettuce, dressing and one topping. To make a good salad, you need a variety of flavorful toppings that have varying textures and flavors. This Greek chopped salad achieves just that!

My favorite ingredients for a Greek chopped salad:

  • Romaine lettuce – is a neutral flavor and has a crisp crunch.
  • Tomatoes – I prefer halved cherry or grape tomatoes.
  • Red onion – sliced or chopped.
  • Feta cheese – I feel like this is essential in a Greek salad.
  • Peperoncini – perfect pickle for this.
  • Parsley
  • Greek olives – or olives of choice, pitted and sliced.
  • Chickpeas – I love to air fry them to make them crispy.

Serve with garlic sauce and charred lemon vinaigrette!

Ingredients:

  • 1 cup chickpeas, drained
  • 1 tbsp olive oil
  • salt to taste
  • 5 cups romaine lettuce, chopped
  • 1/2 cup parsley, chopped
  • 1/2 cup greek olives, pitted and chopped
  • 1/2 cup red onion, chopped
  • 1/2 cup grape tomatoes, chopped
  • 1/2 cup peperoncini, chopped
  • 1/2 cup feta cheese, crumbled
  • Burnt lemon dressing

Preparation:

STEP 1.

Add chickpeas to an air fryer or sheet tray for the oven. Coat in olive oil and some salt. Air fry or roast at 400*F for 10-18 minutes until crispy and crunchy.

STEP 2.

Add all ingredients to a bowl, coat with the dressing and enjoy.
