When it comes to salads I don’t mess around! I am a huge salad lover, but only if it is hearty, packed with varying flavors, and tons of great textures. This warm brussels sprout salad with bacon vinaigrette ticks all of those boxes. If you are a fan of brussels and bacon, you are going to be obsessed with this salad!

Ingredients and Substitutions:

  • Brussels sprouts: in this recipeI shave brussels sprouts very thinly for the ideal texture. Do this with a mandolin, or a sharp knife, just be careful of your fingers! Considering this is a brussels sprout recipe, I would keep these in. However, kale would also be hearty enough for this salad!
  • Apple: I love using apple in this recipe because it adds a nice crunch and tartness. I love pink lady or honeycrisp here for a sweeter taste, but any apple of choice will work!
  • Dried raisins: I love a golden raisin, so used that in this recipe. But any dried fruit would be great. Some of my favorites for this are cranberries, apricots, chopped dates or figs.
  • Pistachios: I love pistachios for the crunch! But you can use any nut here. My favorite are candied pecans, chopped almonds, or pine nuts.
  • Bacon: bacon is the key to this recipe. We use it for crispy bacon toppings, but also the fat from the cooking is used for the vinaigrette. If you are trying to make this without bacon, omit and also consider using a different vinaigrette.

This recipe is great with pork chops & chicken!

Ingredients:

  • 1/2 lb bacon, thinly sliced
  • Vinaigrette:
    • Fat from cooking the bacon
    • 1 shallot, minced
    • 3-5 garlic cloves, minced
    • 1 tbsp maple syrup
    • 1 tbsp dijon mustard
    • 1/2 lemon, juiced
    • salt and pepper
  • 20 oz brussels sprouts, thinly shaved with mandolin
  • 1 pink lady apple, diced
  • 1 cup golden raisins
  • 1 cup pistachios

Preparation:

STEP 1.

In a large pan, add the bacon. Turn the heat to medium and allow the fat to render out and the bacon to crisp up. Once crispy, remove with a slotted spoon.

STEP 2.

In the same pan over medium heat, use the bacon fat and cook the shallots, salting as you go, around 2 minutes. Add the minced garlic and cook another 2 minutes. Turn off the heat. Whisk in the maple syrup, mustard and lemon juice to form the vinaigrette. Taste and adjust for seasoning. Set aside.

STEP 3.

Mix the salad. Combine the shaved brussels, apples, raisins, pistachios and cooked bacon. Coat with the warm bacon vinaigrette and mix to combine. Taste and adjust seasoning accordingly. Serve immediately.
