The other day I was making chocolate budinos and my boyfriend was craving peanut butter to go with them, while I was craving caramel, so I decided to combine the two! I had never attempted peanut butter caramel, but after making this I may never have normal caramel again!

It was perfect paired with chocolate, ice cream, baked into cookies, you name it.

Ingredients:

  • 1/2 cup granulated sugar
  • 2 tbsp butter
  • 1/4 cup coconut milk, full fat
  • 3 tbsp peanut butter

Preparation:

STEP 1.

In a pot over medium heat, add the sugar and make sure it is in an even layer. Slowly melt the sugar, stirring once it starts to melt. It should start to form wet sand texture, keep stirring and melting it slowly. Eventually you will get to where it is all melted, at this point stir for another minute to darken the caramel then turn off the heat.

STEP 2.

Stir in the butter, once the butter is incorporated stir in the coconut milk. Lastly, whisk in the peanut butter until smooth.

STEP 3.

Strain through a fine mesh strainer and serve!

STEP 4.

Store in the fridge for up to a few weeks.
