There is nothing better than crispy chicken except when you add a hot honey sauce. This hot honey crispy chicken is the perfect crunch while also being packed with flavor. It is gluten free, easy to make, and a crowd pleaser!

Key Ingredients and Substitutions:

  • Chicken Breast – I use chicken breast that has been pounded thinly for this recipe. You can also use chicken thighs.
  • Eggs – Eggs are used to help bread the chicken. If you cannot use eggs, use oil.
  • Gluten Free Flour – I use Bob’s Redmill 1-1 GF flour. You can also use all purpose flour if you are not gluten free.
  • Plantain Chips – This is what is going to give it a crunch! You can also use corn flakes or chips of choice.
  • Avocado Oil – This is the best oil to use for pan frying. You only need a thin layer on the pan. It is a high smoke point oil that is flavorless, which is ideal for frying. You can also use grapeseed oil here.
  • Honey – This is the main ingredient for the sauce. You cant really substitute it here!
  • Smoked Paprika and Cayenne – This is where the “hot” in hot honey comes into play. You can also add hot sauce here for a great flavor and heat.

Tips for Making Chicken Cutlets:

  • Slice chicken breasts in half, and then thinly pound – this allows for quick cooking so the outside breading doesn’t burn before the inside can cook.
  • Season both the chicken, the flour, and the plantain crumbs. If you only season the chicken, and not the other ingredients, it will be bland.
  • Make sure to add some water to your egg wash – if you only whisk an egg and don’t add water to egg wash, it will be too thick and not ideal for breading.
  • Start the chicken cutlets stovetop until golden brown, and then finish in the oven. This prevents burning the outer crust.

Ingredients:

  • 1 lb chicken breast, cut into tenders
  • Salt and pepper
  • 1 cup plantain chips
  • 1 egg, whisked
  • ½ cup GF Flour
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/4 -1/2 cup Avocado oil

Hot Honey Sauce:

  • ½ cup honey
  • 3 garlic cloves, minced
  • ½ tsp smoked paprika
  • ¼ tsp cayenne
  • 1/2 tsp salt

Preparation:

STEP 1.

Preheat the oven to 400*F. Season the chicken with salt and pepper on both sides, set aside.

STEP 2.

In a food processor, pulse the plantain chips until they are crumbled in small pieces. You can also do this by placing them in a ziplock bag and crushing with a pot or rolling pin.

STEP 3.

Make your breading station. Put the egg with a few tablespoons of water in one bowl and whisk to combine. Add flour, smoked paprika, Italian seasoning, garlic powder and a pinch of salt in another bowl. In the third bowl add the plantain chips.

STEP 4.

Bread the chicken. Dip the chicken into the egg wash, then coat in the flour, then back into the egg wash, and finally in the plantain chips.

STEP 5.

Transfer the sheet tray to the oven and bake for 5 minutes, until an internal meat thermometer reads 155*F. Remove from the oven and set aside.

STEP 6.

While the chicken is in the oven, make the hot honey. In a pan add the honey and turn to medium low heat. Once bubbling, turn off the heat and stir in the remainder of the sauce ingredients. Serve with the chicken and enjoy!
