This will probably be the easiest recipe I ever post on my website, but it is also one of my favorites! For the past few weeks I have been on this Instant Pot shredded chicken dish multiple times a week. It is one of the easiest set it and forget it dishes you can make and results in chicken that is falling apart and shreddey – aka my favorite kind. This recipe can be done in either and Instant Pot or slow cooker, and is the easiest healthy chicken meal prep you can make!

Key Ingredients and Substitutions:

  • Chicken Thighs – Thighs are my favorite for optimal moisture and more shreddable. Thighs have more fat in them, therefore they stay moist and can shred easier. You can use breast in this recipe, however note that it may be dryer because of the low fat content.
  • Seasoning Blend of Choice – I like to season my chicken with salt and a seasoning blend of choice for optimal flavor. I love anything from Burlap and Barrel!
  • Onion – I used a white onion here for more flavor, but you can use any onion!
  • Garlic – Use fresh minced garlic for the most powerful garlic flavor. But any garlic at all, even garlic granules, will add flavor so feel free to use what you wish!
  • Cilantro – I like to use fresh herbs in this dish to add flavor! You can use any herb you wish however! Items like rosemary, thyme, cilantro, parsley and green onions, would work great here.
  • Chicken Stock – Chicken stock is going to be what braises the chicken and keeps it moist while cooking. Make sure you season it with salt and pepper if it needs it! You can also use vegetable or beef stock here!

This chicken is great with a simple rice pilaf or pommes puree!

Ingredients:

  • 1 lb boneless skinless chicken thighs
  • salt and pepper
  • 1-2 tbsp seasoning blend of choice – I am using Burlap and Barrel’s Adobo
  • 1 white onion, diced
  • 1 tbsp garlic, minced
  • 1/2 cup cilantro, minced
  • 1-2 cups chicken stock

Preparation:

STEP 1.

Season the chicken with salt and pepper and seasoning blend so it is evenly coated.

STEP 2.

Add all of the ingredients to an Instant Pot or slow cooker. Make sure the chicken is halfway submerged by liquid. Stir everything up so it is evenly distributed. Secure the lid and if using an Instant Pot cook on manual for 30 minutes. If using a slow cooker, cook on low for 6-8 hours until tender.

STEP 3.

Release the pressure from the Instant Pot lid and remove the lid. Place the chicken onto a cutting board or bowl and shred with two forks.

STEP 4.

Scoop some of the onions out from the broth, and serve on top of the chicken. Serve and enjoy!

If using as meal prep, cool for 30 minutes on the counter and then transfer to the fridge to store. Store for 3-4 days.
